Lettuce is popular in Japan and just like in the West, is commonly enjoyed in salads and side dishes. The demand for lettuce in Japan is high which is why it’s a common crop in 10 of Japan’s 47 prefectures.
However, conventional farming methods cannot keep up with demand as the average farm only produces 26,000 heads per acre. A new method being implemented in Japan involves growing lettuce on multiple floors inside of indoor farms. One such facility located in Fukushima, which also happens to be the largest indoor farm in the world (25,000 square foot in size), already produces 10,000 heads per day. Not only does this indoor farming method yield higher crops, but it also eliminates wastage and there’s no need for harmful pesticides either.
